A highly skilled butcher is required at Larsen’s Grill in Simi Valley to monitor airflow, temperature, and humidity at all times. Natural enzymes in prime meat act as soothing tenderizers during dry aging. As moisture evaporates from the meat, it becomes richer, butterier, and has a more supple texture. In the process of dry aging, a thin layer of coating forms on the surface of the meat. Flavor and juice are sealed in by this coating, which is later trimmed off. Afterward, Larsen’s Grill wet ages its beef for another 14 days, preserving its flavor of highly marbled, prime grade meat. High quality beef is prepared using this time-honored method. Our guests enjoy the best steak they have ever tasted thanks to it.

Additionally, at Larsen’s Grill, we slow sear the meat at 500 degrees in its own natural juices, as opposed to blasting it at 1700 degrees like most steakhouses. When it comes to steak, why rush? In order to make the best steak, we cook it slowly. There are no exceptions.
